Black rice with Shrimps


  • 8 prawns
  • 1 tablespoon vegetable oil
  • 1 leek
  • 1/2 shallot
  • 150 grams Black rice Familex
  • 400 milliliters fish stock
  • 2 bags squid


  1. Add the oil to a skillet on medium heat. Add the prawn shells and saute for a few minute. Strain the oil and return to the skillet.
  2. Add the leek and shallot to the skillet and saute for about 3 minutes. Incorporate the rice and saute for 2 minutes
  3. Add the fish stock and bring to a boil.
  4. Add the squid ink and simmer for 18 minutes.
  5. With 3 minute to go, remove from the heat and add the shrimp. Allow the rice to rest 5 minutes before serving.
