In Bulgaria, there is a common misconception that “couscous” is the authentic couscous, which is made by hand from semolina ground from durum wheat and has a characteristic grainy structure. It originates from North Africa and the Middle East and is not widespread in our country.
Under the name “cous-cous” in our country and the countries of Eastern Europe, a pasta product in the shape of small grains, made from wheat flour, is known. It is cooked in a similar way to pasta, but has a thicker texture. In Italy it is known as “peperini”, “acini di pepe” or “piombi”. Couscous is quick and easy to prepare, making it ideal for healthy and tasty meals.
Tip: High-quality durum wheat products, including spaghetti, do not require long cooking. To achieve the ideal al dente texture, it is enough to cook them between 5 and 10 minutes, depending on the type and thickness.
